Cheesy, creamy, crispy, and spicy enough, this sandwich disappears as quickly as I make it. I wanted the jalapeño flavor to stand out without completely overpowering the grilled cheese, but it’s easy to make it spicier if that’s your thing. I usually add extra jalapeños when I’m in the mood for more heat. Enjoy!

How to Make Jalapeno Popper Grilled Cheese Sandwiches

Make the filling
In a small bowl, whisk together the cream cheese, garlic powder, and jalapeño brine until smooth and creamy.

Spread the cream cheese mixture evenly on one side of each slice of bread.

Add cheese and jalapeños
Layer the cheddar in one slice, then sprinkle the chopped jalapeños on top.

Close the sandwich
Top with second slice, cream cheese side in. Spread the outside of the sandwich with butter or mayo.

Toast the sandwich over medium heat for 3 to 4 minutes until the bread is deep golden and the cheese is melted.

Slice and serve
Transfer to a cutting board and let sit for 1 minute before slicing and serving hot. Enjoy!

My favorite way to serve it
- Pair it with tomato soup for a classic grilled cheese combo.
- Serve with sweet potato fries Crispy oven fried.
- Add fresh salsa, sliced avocado or extra pickled chilies beside
- Balance the richness with a simple salad or chopped vegetables.
- Serve with a Dipping sauce. I am partial to the farm!
- Great with iced tea, lemonade or horchata.

Easy way to make it better
- Dry the jalapeños before adding them to the sandwich so the bread doesn’t get soggy.
- Sharp cheddar melts nicely here, but if you want more heat, pepper jack works well.
- Tokdaf holds up particularly well due to its crisp crust and firm texture.
- If your bread is browning too quickly, lower the heat slightly to allow the cheese to melt completely.
- Let the sandwich rest for about 1 minute before slicing so that the cheese stays curdled instead of running out immediately.
