A note from Kristen

Cheesy, creamy, crispy, and spicy enough, this sandwich disappears as quickly as I make it. I wanted the jalapeño flavor to stand out without completely overpowering the grilled cheese, but it’s easy to make it spicier if that’s your thing. I usually add extra jalapeños when I’m in the mood for more heat. Enjoy!

  • Cream Cheese: The cheese serves as the creamy base of the spread. Swap with vegan or dairy-free cream cheese if needed.
  • Pickled Jalapenos: The tension brings the heat! If you don’t have the pickled version, fresh jalapeños can work in a pinch, but you’ll miss their tangy, bright edge.
  • Sharp Cheddar Cheese: Gooey adds texture and rich flavor. Use vegan cheddar cheese if preferred.

Easy way to make it better

  • Dry the jalapeños before adding them to the sandwich so the bread doesn’t get soggy.
  • Sharp cheddar melts nicely here, but if you want more heat, pepper jack works well.
  • Tokdaf holds up particularly well due to its crisp crust and firm texture.
  • If your bread is browning too quickly, lower the heat slightly to allow the cheese to melt completely.
  • Let the sandwich rest for about 1 minute before slicing so that the cheese stays curdled instead of running out immediately.
